Menu: Grilled Beef or Chicken Kebabs, Borek Pastry Squares, Stuffed Grape Leaves, Cacik Yogurt Dip, Baklava Bites
Grilled Beef or Chicken Kebabs
Ingredients:2 lb beef or chicken cubes, ¼ cup olive oil, 3 tbsp lemon juice, 3 garlic cloves, 1 tsp cumin, 1 tsp paprika, 1 tsp oregano, salt, pepper.
Recipe:Marinate meat for 2–4 hours. Thread onto skewers. Grill or broil until cooked through. Serve with yogurt dip.
Borek Pastry Squares
Ingredients:1 package phyllo dough, 2 cups feta, 1 cup spinach chopped, 2 eggs, ½ cup melted butter.
Recipe:Layer phyllo in a baking dish, brushing each layer with butter. Add feta, spinach, and egg mixture. Top with more phyllo. Bake at 375°F for 30–35 minutes. Cut into squares.
Stuffed Grape Leaves
Ingredients:1 jar grape leaves, 1 cup cooked rice, ¼ cup pine nuts, ¼ cup raisins optional, parsley, mint, lemon juice, olive oil.
Recipe:Mix rice, nuts, herbs, lemon juice, and olive oil. Fill grape leaves, roll tightly, and simmer in a covered pan with lemon water for 25–30 minutes. Serve chilled or room temperature.
Cacik Yogurt Dip
Ingredients:2 cups Greek yogurt, 1 cucumber grated and drained, 2 garlic cloves, lemon juice, dill or mint, salt.
Recipe:Mix all ingredients. Chill for at least 30 minutes. Serve with kebabs, pita, or vegetables.
Baklava Bites
Ingredients:1 package phyllo cups, 1 cup chopped walnuts or pistachios, ½ tsp cinnamon, ½ cup honey syrup.
Recipe:Fill phyllo cups with nuts and cinnamon. Bake at 350°F for 8–10 minutes. Drizzle with warm honey syrup.

Chipa Cheese Bread
Ingredients:2 cups tapioca starch, 1 cup shredded cheese, 2 eggs, ¼ cup butter, ½ cup milk, 1 tsp salt.
Recipe:Mix ingredients into a soft dough. Form small rolls. Bake at 375°F for 18–22 minutes until puffed and lightly golden.
Sopa Paraguaya Squares
Ingredients:2 cups cornmeal, 1 onion diced, 2 cups milk, 3 eggs, 1½ cups cheese, ¼ cup butter, 1 tsp salt.
Recipe:Sauté onion in butter. Mix cornmeal, milk, eggs, cheese, onion, and salt. Pour into greased pan. Bake at 375°F for 35–40 minutes. Cool slightly and cut into squares.
Beef Skewers
Ingredients:2 lb beef sirloin cubes, ¼ cup oil, 3 tbsp lime juice, 2 garlic cloves, 1 tsp cumin, salt, pepper.
Recipe:Marinate beef for 1–2 hours. Thread onto skewers. Grill or broil until browned and cooked to preference.
Empanadas
Ingredients:12 empanada discs, 1 lb ground beef, ½ onion diced, 1 tsp cumin, 1 tsp paprika, chopped olives optional, 1 egg beaten.
Recipe:Cook beef with onion and spices. Cool filling. Add to discs, fold, seal, brush with egg, and bake at 400°F for 20–25 minutes.
Corn and Cheese Bites
Ingredients:2 cups corn, 1 cup shredded cheese, ½ cup flour, 2 eggs, green onion, salt, pepper.
Recipe:Mix ingredients. Spoon into mini muffin tins. Bake at 375°F for 18–20 minutes until set and golden
