Menu: Mini Schnitzel Bites, Soft Pretzels, Austrian Potato Salad, Apple Strudel Squares, Berry Jam or Mustard


Mini Schnitzel Bites

Ingredients:2 lb chicken or pork cutlets, 1 cup flour, 3 eggs beaten, 2 cups breadcrumbs, salt, pepper, oil, lemon wedges.

Recipe:Cut meat into bite-size pieces. Dredge in flour, egg, then breadcrumbs. Pan-fry until golden and cooked through. Serve with lemon wedges, mustard, or berry jam.


Soft Pretzels

Ingredients:12 small soft pretzels, 2 tbsp melted butter, coarse salt, mustard.

Recipe:Warm pretzels according to package directions or bake fresh dough if desired. Brush with melted butter, sprinkle with coarse salt, and serve with mustard.


Austrian Potato Salad

Ingredients:3 lb Yukon gold potatoes, ½ cup beef or vegetable broth, ¼ cup apple cider vinegar, 2 tbsp Dijon mustard, ¼ cup oil, ½ red onion, parsley, salt, pepper.

Recipe:Boil potatoes until tender. Slice warm potatoes and toss with broth, vinegar, mustard, oil, onion, parsley, salt, and pepper. Serve warm or room temperature.


Apple Strudel Squares

Ingredients:1 package puff pastry, 4 apples diced, ¼ cup sugar, 1 tsp cinnamon, ¼ cup raisins optional, 1 egg beaten.

Recipe:Cook apples with sugar and cinnamon until softened. Fill puff pastry, fold, brush with egg, and bake at 400°F for 20–25 minutes. Cut into squares.


Berry Jam or Mustard Bowls

Ingredients:Berry jam, Dijon mustard, whole-grain mustard.

Recipe:Place small bowls of jam and mustard near schnitzel and pretzels. Label clearly so guests can try sweet or savory dipping.

Menu: Falafel, Chicken Shawarma Skewers, Hummus, Pita Wedges, Knafeh Dessert Bites


Falafel

Ingredients:2 cans chickpeas drained, ½ onion, 3 garlic cloves, ½ cup parsley, ½ cup cilantro, 1 tsp cumin, 1 tsp coriander, 2 tbsp flour, salt, oil.

Recipe:Pulse all ingredients except oil until coarse. Form small balls. Fry until golden or bake at 400°F for 20–25 minutes, turning once.


Chicken Shawarma Skewers

Ingredients:2 lb chicken thighs, ¼ cup yogurt, 3 tbsp lemon juice, 3 tbsp olive oil, 2 garlic cloves, 2 tsp cumin, 2 tsp paprika, 1 tsp turmeric, ½ tsp cinnamon, salt.

Recipe:Marinate chicken at least 2 hours. Thread onto skewers. Grill or bake at 425°F until cooked through. Serve with garlic sauce.


Hummus

Use the hummus recipe above.

Pita Wedges

Ingredients:6 pita rounds, olive oil, za’atar or salt.

Recipe:Cut pita into wedges. Brush with olive oil. Sprinkle with za’atar or salt. Warm at 350°F for 5–7 minutes.


Knafeh Dessert Bites

Ingredients:8 oz shredded phyllo or kataifi, ½ cup melted butter, 1 cup ricotta or sweet cheese, ½ cup sugar syrup, pistachios.

Recipe:Mix shredded phyllo with butter. Press half into a muffin tin, add cheese, top with more phyllo. Bake at 375°F until golden. Drizzle with syrup and pistachios.
