World Cup Watch Party Spread Australia vs. Paraguay

Country: Paraguay

Menu: Chipa Cheese Bread, Sopa Paraguaya Squares, Empanadas, Grilled Beef Skewers, Salsa or Chimichurri-Style Dipping Sauce


Chipa Cheese Bread

Ingredients:2 cups tapioca starch, 1 cup shredded cheese, 2 eggs, ¼ cup butter, ½ cup milk, 1 tsp salt.

Recipe:Mix ingredients into a soft dough. Form small rolls. Bake at 375°F for 18–22 minutes until puffed and lightly golden.


Sopa Paraguaya Squares

Ingredients:2 cups cornmeal, 1 onion diced, 2 cups milk, 3 eggs, 1½ cups cheese, ¼ cup butter, 1 tsp salt.

Recipe:Sauté onion in butter. Mix cornmeal, milk, eggs, cheese, onion, and salt. Pour into greased pan. Bake at 375°F for 35–40 minutes. Cool slightly and cut into squares.


Beef Skewers

Ingredients:2 lb beef sirloin cubes, ¼ cup oil, 3 tbsp lime juice, 2 garlic cloves, 1 tsp cumin, salt, pepper.

Recipe:Marinate beef for 1–2 hours. Thread onto skewers. Grill or broil until browned and cooked to preference.


Empanadas

Ingredients:12 empanada discs, 1 lb ground beef, ½ onion diced, 1 tsp cumin, 1 tsp paprika, chopped olives optional, 1 egg beaten.


Recipe:Cook beef with onion and spices. Cool filling. Add to discs, fold, seal, brush with egg, and bake at 400°F for 20–25 minutes.


Corn and Cheese Bites

Ingredients:2 cups corn, 1 cup shredded cheese, ½ cup flour, 2 eggs, green onion, salt, pepper.

Recipe:Mix ingredients. Spoon into mini muffin tins. Bake at 375°F for 18–20 minutes until set and golden.


Salsa or Chimichurri-Style Dipping Sauce

Ingredients:1 cup parsley, ¼ cup cilantro, 3 garlic cloves, ½ cup olive oil, 3 tbsp red wine vinegar, ½ tsp chili flakes, salt, pepper.

Recipe:Finely chop herbs and garlic. Stir with olive oil, vinegar, chili flakes, salt, and pepper. Serve with grilled beef skewers and empanadas.

Mini Meat Pies

Ingredients:1 lb ground beef, ½ onion diced, 1 cup beef gravy, 1 tbsp Worcestershire sauce, puff pastry, pie dough or biscuit dough, egg wash.

Recipe:Cook beef and onion. Add gravy and Worcestershire. Spoon into mini muffin tins lined with dough. Top with puff pastry, brush with egg wash, and bake at 400°F for 18–22 minutes.


Sausage Rolls

Ingredients:1 lb sausage meat, 1 sheet puff pastry, 1 egg, ½ cup breadcrumbs, 1 tbsp ketchup, egg wash.

Recipe:Mix sausage, egg, breadcrumbs, and ketchup. Roll inside puff pastry. Cut into small pieces, brush with egg wash, and bake at 400°F for 20–25 minutes.


Grilled Shrimp

Ingredients:2 lb large shrimp, ¼ cup olive oil, 2 garlic cloves, lemon zest, lemon juice, salt, pepper.

Recipe:Marinate shrimp for 15–20 minutes. Skewer and grill 2–3 minutes per side until pink and firm. Serve with lemon wedges.


Potato Wedges

Ingredients:4 large potatoes, olive oil, paprika, garlic powder, salt, pepper.

Recipe:Cut potatoes into wedges. Toss with oil and seasoning. Bake at 425°F for 35–40 minutes, turning once, until crisp.


Lamington Dessert Bites

Ingredients:1 pound cake, 1 cup chocolate glaze, 2 cups shredded coconut, whipped cream or jam optional.


Recipe:Cut pound cake into cubes. Dip in chocolate glaze, then roll in coconut. Chill until set. For a fancy version, split cubes and add jam or cream.
